Artichoke-Parmesan Crostini

 

 

This simple artichoke appetizer calls for store-bought marinated artichokes, reducing the prep time to almost zero

 

 

 

8 slice baguette

2 tbsp. olive oil

Coarse salt and ground pepper

1 jar jar marinated artichoke hearts

¼ c. shredded Parmesan cheese (optional)

1 tbsp. chopped fresh parsley

 

 

 

Preparation :

 

1.Preheat oven to 350 degrees F. Make crostini:

2.Brush baguette slices on both sides with a total of 1 tablespoon oil; season with salt and pepper.

3.Place on a baking sheet, and bake, turning over once, until golden, 10 to 12 minutes. Cool.

4.Meanwhile, make topping: Finely chop artichokes, and combine in a bowl with Parmesan, parsley, and remaining tablespoon oil.

5.Dividing evenly, spoon topping onto crostini, and garnish with additional Parmesan, if desired.
